If you would like to experience something extraordinary, visit The Publican restaurant. It is a beer-focused restaurant located at 845 W. Fulton in Chicago. The Publican is known as a restaurant that uses all parts of an animal to prepare their dishes.
For example, you can order pig’s tail and ear, beef heart or calf’s brain. Besides the meat dishes, the menu also contains fish and vegetables dishes. They have a big selection of European and American beers, wines and hard ciders.
It was my first time at Publican and it was a really good experience. The service was excellent. Our server Rebecca was very knowledgeable about the menu and very nice. I think she was the best server I’ve ever had.
For the first time I had a chance to try pork rinds, sweetbreads and pig’s ear. I have to admit that pig’s ear tastes like crispy bacon. For those who don’t know, sweetbreads have nothing in common with bread or cake. It is a veal brain. It is actually pretty good. I was a bit disappointed with the country ribs. They were too dry for me.
I loved the Radicchio salad. I think it was my favorite dish. It had ricotta cheese, walnuts, apple and onion.
Overall, The Publican is a great place to try something unusual- definitely, worth checking out.
