That this place is so under the radar on Staten Island Sal's is done up to be a blast from the past, complete with a high tank toilet (like in the Godfather), old hits playing on their antique jukebox, and waitresses dressed in 50's diner gear. It's not the biggest place in the world, but they do a lot with the space.
We started off with some garlic bread, which seemed to be done in the coal oven and was pretty good. Then we moved onto our first pizza, which had half pepperoni, onions, and garlic and half plain. The style is a Neapolitan-NY hybrid, just as the original coal-oven giants are The crust was well done, but thats just how I like it; it had a great flavor as well. The plain slice was great as well, with a flavorful sauce and a nice homemade mozzarella.

The next pie is what made me give 5 stars: the white pie. The one problem with the previous pie was that it was a bit limp; this pie was much sturdier, although no doubt the different ingredients helped that. My favorite part was that they used a pastry ricotta (like that used in cannoli or lobster tails) on it and it worked beautifully. The pie also brought out the flavor of the mozzarella more, and it was one of the best pies I've had. Some lady we were talking to brought out some rice balls for us which were ok (I only took a bit out of one) All in all this was an epic dining experience, but even if we hadn't been treated so amazingly and had dishes comped for us, I would still think this highly of the place because the pizza is that damn good.

Very interesting....I didn't know so much about how pizza/pasta is made. Very informative.
